Greybeard's Strawberry Bread

Dry ingredients

1 2/3 cups flour
1 cup sugar
1 1/2 tsp cinnamon
1/2 tsp baking soda
1/2 tsp salt

1 full cup of quartered strawberries
2 eggs
2/3 cup vegetable oil
1 tsp vanilla

Preheat oven to 350 F
Combine dry ingredients in a bowl and set aside
In a large bowl beat eggs, oil and vanilla until well mixed (use whisk) blend in strawberries.
Add dry ingredients to wet and mix. Pour into greased 9x5x3 loaf pan. Bake for 40 minutes or until inserted toothpick comes out clean. Cool in pan for 15 minutes.

Note: We use our own frozen strawberries with the juice. If you are using fresh berries add 1 tsp of sugar to draw out the juice. Freezes well.

Greybeard's Banana Orange Cake

3/4 cup of margarine
2 cups sugar
3 eggs
1 1/2 tsp vanilla
juice and pulp from 1 large orange (add orange juice to make 3/4 cup)
zest from the orange
5-6 ripe medium bananas

mix together:
3 cups flour
1/2 tsp baking soda
3 tsp baking powder

Preheat oven to 350 F

Beat butter, sugar, eggs, and vanilla until light and fluffy, add orange juice and zest, beat well
To this batter alternately add mashed bananas and flour mixture. Mix until well blended.
Pour into greased and floured angle food pan. Bake for 45-50 minutes. Freezes well.

Lunenburg Bluebana Bread

2 cups frozen blueberries

1 cup margarine (softened)
2 cups sugar
7 medium ripe bananas (mashed)
2 tsp vanilla
4 eggs

4 cups flour (set aside 2 Tbs)
1 Tbs ground allspice
2 tsp baking soda
1 tsp baking powder
1/2 tap salt

Preheat oven to 325 F
Makes three 9x5 or nine 5x3 loaves

Toss blueberries with 2 Tbs flour and set aside
Mix together remaining flour, allspice, baking soda, baking powder and salt, set aside. In a large bowl cream margarine and sugar until fluffy. Add eggs, mashed bananas, vanilla and beat until smooth.
Add flour mixture and beat until smooth. Softly fold in blueberries.
Pour into greased loaf pans and bake for about 45 minutes or until an inserted toothpick comes out clean (adjust time if using smaller pans) Cool in pans for 15-20 minutes) Freezes well.

Note: I freeze bananas and I don't drain them.

Nova Scotia Carrot Cake

Pre heat oven to 350

Mix together well:
1 1/2 cups vegetable oil
4 eggs (one at a time)
1 tsp brandy flavor
1 tsp rum flavor

Stir in 3 packed cups of grated carrots

Mix together and add to carrot mixture:
3 cups flour
2 cups sugar
2 tsp baking powder
2 tsp baking soda
2 tsp cinnamon
1 tsp salt

Blend in:
1 cup chopped walnuts
1 cup raisins

Pour into well greased and floured angle food or bunt pan
Bake for one hour or until a toothpick come out clean.

Vegan Pumpkin Bread

Pre heat oven to 350

1 cup honey
1 cup brown sugar
1 cup oil
1 large (796 ml) can pure pumpkin puree
1 cup chopped dates
1 cup chopped walnuts
1 tsp salt
2 tsp cinnamon
1 tsp ground cloves
4 tsp baking soda
4 cups all purpose flour
1 cup wheat germ

Combine honey, brown sugar, oil, pumpkin, dates, walnuts, salt, cinnamon, cloves, and baking soda, in a large bowl, mix well. Stir in the flour and wheat germ. Evenly divide into three well oiled 8-1/2 by 4-1/2-inch loaf pans and bake for one hour or until done. Allow to cool for 20 min. place on racks to continue cooling.

Greybeard's Pumpkin Nut Bread

Pre heat oven to 350

1 1/2 cups butter or margarine
3 3/4 cups sugar
3 cups pumpkin purée (796 ml can)
3 tsp vanilla
4 1/2 cups flour
2 1/4 tsp salt
2 1/2 tsp baking soda
2 1/2 tsp baking powder
3 tsp cinnamon
2 tsp ground cloves
1 1/2 tsp nutmeg
1 1/2 tsp all spice
1 1/2 cups chopped walnuts
1 1/2 cups raisins

Cream butter and sugar; beat in eggs (one at a time), mix in pumpkin and vanilla
Sift dry ingredients, blend into pumpkin mixture, stir in nuts and raisins.
Grease 4 loaf pans bake for 1 hour or until inserted toothpick comes out clean.
Allow to cool, freezes well.

Nova Scotia Zucchini Bread

Pre heat oven to 375F

1 cup vegetable oil
3 eggs
2 tsp vanilla
2 packed cups grated zucchini

1 1/2 cups sugar
2 cups flour
1/4 tsp baking powder
2 tsp baking soda
3 tsp cinnamon
1 tsp salt

1 cup raisins
1 cup walnuts
Core and grate two cups of zucchini (don't peel or drain)
Mix with wet ingredients. Combine dry ingredients and then blend into the wet.
Stir in walnuts and raisins.
Pour into 2 greased loaf pans, bake for 1 hour or until an inserted toothpick comes out clean

Greybeard's Streusel Lemon Bread

Pre heat oven to 350 degrees.

1 cup finely chopped walnuts
1/2 cup packed brown sugar
1/2 tsp nutmeg
combine ingredients and set aside.

2 cups flour
1 tsp baking powder
1/2 tsp baking soda
combine ingredients and set aside.

1 and 1/4 cups sugar
1/2 cup margarine
3 eggs
1/2 cup lemon juice
zest of one lemon 1/2 cup milk In a large bowl beat sugar and margarine until fluffy.
Add eggs and beat well. Gradually beat in lemon juice and zest.
Alternately stir flower and milk to batter until well blended.
Spoon half of the batter into a well greased and flowered 9x5 loaf pan.
Sprinkle half of the nut mixture over the batter.
Pour in remaining batter and sprinkle rest of nut mixture over the top.
Place in a 350 degree oven for 50-60 minutes until cake tester comes out clean.

Rosanna's Coffee Spices

Rosanna never measures but it is mostly Cinnamon and the rest are in decending order:

Cinnamon
Nutmeg
Allspice
Anise
Cloves
Ginger
and Anise seeds that will help it flow

Get a shaker and have fun. Shake the mixture into the grounds before you brew your coffee.
